Olympus Dining is our 200-seat Greek restaurant at Wunderlich Lane in Surry Hills. It’s whole fish cooked over charcoal, milk-fed lamb, generous shared tables and a dining room that feels like a celebration most nights of the week.

We’re part of The Apollo Restaurant Group, the team behind The Apollo and Cho Cho San in Potts Point, and Greca and Yoko Dining at Howard Smith Wharves in Brisbane. This October, we’re opening two new restaurants right next door to Olympus, creating even more opportunities for our people to grow with us.

The role

We’re looking for an experienced Restaurant Manager to lead the front-of-house team at Olympus.

This is a big restaurant with a team of more than 70 people and some seriously busy services, so we need someone who understands volume without letting it take over the experience. You’ll set the tone on the floor, lead the management team and make sure the restaurant feels warm, considered and generous, even when every seat is full.

You’ll take ownership of the guest experience, service standards, rostering, floor planning and cost control. Just as importantly, you’ll coach the managers and section leaders around you, building a team that can run a brilliant service whether you’re standing in the room or not.

It’s a senior role with real visibility across the group. With our Surry Hills precinct growing this October, there’s plenty of room for the right person to shape what comes next.

About you

  • You’ve led a large front-of-house team in a busy, high-quality restaurant, ideally within a hatted or well-known venue

  • You know how to manage serious volume while keeping the service personal

  • You have strong food and wine knowledge and genuinely enjoy teaching others

  • You’re commercially minded, organised and comfortable owning the operational side of the restaurant

  • You lead calmly, communicate clearly and bring people with you

  • You have full working rights in Australia

We believe great restaurants are built by great people. We teach properly, invest in our leaders and don’t expect managers to simply figure everything out as they go.

Many of our senior leaders started on the floors of our own restaurants and have grown with us over the years. We don’t confuse pressure with poor behaviour, and we care as much about how someone leads as we do about the results they deliver.

We’d rather build careers than simply fill shifts. Honestly, we think our restaurants are better because of it.
